3-Ingredient Slow Cooker Whole Chicken is about as simple as a chicken dinner gets. A whole chicken, salt, and a little water cook slowly until the meat is tender, juicy, and easy to pull away from the bone.
It’s a useful recipe for days when I want cooked chicken without roasting one in the oven or buying a rotisserie chicken. Once it’s in the slow cooker, there’s very little left to do.
The finished chicken can be served as the main dish with a couple of easy sides, but I make it just as often for the leftovers. The tender meat is handy for sandwiches, casseroles, soups, salads, and quick lunches during the week.
With only three ingredients, the chicken itself does most of the work flavor-wise. Slow cooking creates plenty of savory juices at the bottom of the cooker, so don’t throw those away.
Why Such A Simple Whole Chicken Works
A whole chicken naturally contains enough fat and moisture to stay juicy as it cooks. You don’t need butter, oil, or a complicated seasoning mixture to get tender meat.
Salt seasons the chicken while allowing its natural flavor to come through. The small amount of water creates moisture at the beginning of cooking, and the chicken releases considerably more liquid as it heats.
Cooking the bird whole also gives you a nice mixture of white and dark meat. Everyone can choose the cut they prefer, and anything left can be removed from the bones for another meal.

Whole Chicken
Use a whole chicken weighing about 4–5 pounds, or one that fits comfortably inside your slow cooker with the lid fully closed.
Remove any giblets or packets from the cavity before cooking and pat the chicken dry.
Salt
About 1 tablespoon of salt seasons the entire bird. Sprinkle it evenly over the outside and inside the cavity rather than concentrating it in one area.
If you’re using a smaller chicken or are sensitive to salt, you can reduce the amount slightly.
Water
You’ll only need about ½ cup of water.
Don’t be tempted to fill the slow cooker with liquid. The chicken releases plenty of its own juices during cooking, and too much added water will simply dilute their flavor.

Prepare The Chicken
Remove the chicken from its packaging and check the cavity for giblets.
Pat the outside dry with paper towels. Sprinkle the salt evenly over the skin and inside the cavity.
Place It In The Slow Cooker
Pour the water into the bottom of the slow cooker.
Set the whole chicken inside breast-side up. Make sure the lid closes completely without pressing heavily against the chicken.
Cook Until Tender
Cover and cook on LOW until the chicken is tender and safely cooked through. A 4–5 pound chicken will commonly need around 6–8 hours, although slow cookers vary.
Check the temperature in the thickest part of the breast and the innermost part of the thigh without touching bone. Poultry should reach at least 165°F.
The legs should also move easily at the joints when the chicken is ready.
Rest Before Carving
Carefully lift the chicken from the slow cooker. It may be extremely tender, so using two large utensils underneath it is often easier than trying to grab it with tongs.
Let it rest for about 10 minutes before carving. This also gives you time to skim excess fat from the cooking juices if you’d like to serve them with the meat.

Do I Need To Brown The Chicken First?
No. The chicken can go directly into the slow cooker after seasoning.
The skin won’t become crisp in the slow cooker, though. If crisp skin matters to you, transfer the cooked chicken carefully to a baking sheet and briefly place it under the broiler.
Is Half A Cup Of Water Really Enough?
Yes. Whole chicken releases a surprising amount of liquid during slow cooking, so only a small amount is needed at the beginning.
Can I Cook The Chicken On HIGH?
You can, although LOW generally gives you more forgiving, evenly tender results. If cooking on HIGH, begin checking the temperature much earlier.
Why Did My Chicken Fall Apart?
That’s common with slow-cooked whole chicken. The meat becomes extremely tender and may separate around the legs and wings when lifted.
Can I Add More Seasonings?
Certainly, although it would no longer technically be a three-ingredient recipe. Garlic powder, paprika, thyme, or your favorite poultry seasoning can all be added if you want a different flavor.

Use a meat thermometer rather than relying only on appearance or cooking time. The chicken should reach at least 165°F in the appropriate thickest areas without touching bone.
What To Serve With 3-Ingredient Slow Cooker Whole Chicken
I usually keep the sides simple with this chicken since the whole point is an easy dinner. Mashed potatoes are great with a spoonful of those savory juices from the slow cooker, but roasted potatoes, rice, or warm dinner rolls work just as well. Add green beans, broccoli, carrots, or a simple salad and you’ve got a complete meal without much extra work. If there’s chicken left the next day, pull it from the bones and use it for sandwiches, wraps, soup, or a quick chicken casserole rather than trying to recreate the same dinner.
Be careful when lifting the cooked chicken from the slow cooker because it can become tender enough to fall apart. Supporting it from underneath makes the job much easier.
And save those juices in the bottom. Even with only chicken, salt, and water, they develop plenty of flavor while everything cooks and are perfect for spooning over the carved meat and potatoes.

- ½ cup water
Instructions
- Remove any giblets from the chicken cavity and pat the chicken dry with paper towels.
- Sprinkle the salt evenly over the outside of the chicken and inside the cavity.
- Pour the water into the bottom of a large slow cooker.
- Place the whole chicken in the slow cooker, breast-side up. Cover with the lid.
- Cook on LOW for 6–8 hours or HIGH for 4–5 hours, until the chicken is very tender and the thickest part reaches 165°F (74°C).
- Carefully transfer the chicken to a serving platter and let it rest for about 10 minutes before carving.
- Spoon a little of the cooking juices over the sliced chicken before serving, if desired.
