Ingredients
- 2 large eggplants sliced into ½-inch thick rounds
- 1 teaspoon salt for drawing out moisture
- 2 cups Italian-style breadcrumbs
- ½ cup grated Parmesan cheese divided
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- 3 large eggs beaten
- 2 tablespoons milk
- 3 cups marinara sauce store-bought or homemade
- 2 ½ cups shredded mozzarella cheese
- 2 tablespoons olive oil for brushing
- Fresh basil or parsley for garnish (optional)
Instructions
- Step 1: Prep the Eggplant
- Lay the eggplant slices on a baking sheet and sprinkle both sides lightly with salt. Let them sit for 20–30 minutes to release excess moisture. Pat dry thoroughly with paper towels.
- Step 2: Prepare Coating Station
- Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper and lightly brush with olive oil.
- In one shallow bowl, combine breadcrumbs, ¼ cup Parmesan cheese, garlic powder, and Italian seasoning.
- In another bowl, whisk together eggs and milk.
- Step 3: Bread the Eggplant
- Dip each eggplant slice into the egg mixture, allowing excess to drip off. Then coat well in the breadcrumb mixture, pressing gently so crumbs adhere.
- Place coated slices on the prepared baking sheets in a single layer. Lightly brush the tops with olive oil.
- Step 4: Bake
- Bake for 18–20 minutes, flipping halfway through, until golden brown and crisp.
- Step 5: Assemble
- Spread a thin layer of marinara sauce in a 9×13-inch baking dish. Arrange a layer of baked eggplant slices on top. Spoon more sauce over them, then sprinkle with mozzarella and a bit of remaining Parmesan.
- Repeat layers until ingredients are used, finishing with sauce and cheese on top.
- Step 6: Final Bake
- Return to the oven and bake for 15–20 minutes, until cheese is melted and bubbly. For extra browning, broil for 1–2 minutes at the end.
- Step 7: Rest & Serve
- Let rest for 10 minutes before slicing. Garnish with fresh basil or parsley and serve warm.
