Ingredients
- 1 ½ cups 188 g all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup 113 g unsalted butter, softened
- ¾ cup 150 g granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup 120 ml buttermilk
- 1 ½ cups about 225 g fresh blackberries
- 1 tablespoon all-purpose flour for tossing the blackberries
- 1 tablespoon coarse sugar optional, for topping
Instructions
- Preheat the oven: Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- Combine the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cream the butter and sugar: In a large bowl, beat the softened butter and sugar for 2–3 minutes, until light and fluffy.
- Add the eggs and vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Add the buttermilk: Add the dry ingredients in two additions, alternating with the buttermilk. Mix just until the batter comes together. Avoid overmixing.
- Prepare the blackberries: Toss the blackberries gently with 1 tablespoon of flour. Fold about two-thirds of the berries into the batter.
- Fill the pan: Spread the batter evenly into the prepared cake pan. Scatter the remaining blackberries over the top and sprinkle with coarse sugar if desired.
- Bake: Bake for 40–45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool: Let the cake cool in the pan for 10–15 minutes, then transfer it to a wire rack to cool further.
- Serve: Slice and serve slightly warm or at room temperature. It is delicious on its own or with a dusting of powdered sugar.
