Choosing the right pepper is crucial for a meal’s success. If jalapeños are too hot, they’ll deter the kids. If it’s green peppers instead of red, the finicky ones will fuss. And let’s not delve into the spicier varieties. Often, personal tastes must be sidelined to ensure everyone enjoys the meal, leading me frequently to choose poblanos.

This brings us to Poblano rice, or as my friends call it, cheesy rice (arroz gratinado). It’s an ideal dish to share. What makes this rice casserole exceptionally creamy and cheesy is the Mexican crema, which is creamier than regular sour cream and withstands baking without curdling. An essential step I never skip is toasting the rice at the start, as it significantly enhances the dish’s flavor.

I have a couple of variations of this cheesy rice: one baked in the oven and another entirely stovetop. Sometimes, when short on time, I substitute roasted poblanos with canned green chiles. Luckily, canned roasted poblanos have recently become available where I live—a game changer. The first two photos showcase the oven-baked version, topped with a bit of extra cheese.

This dish features the flavorful yet milder poblano pepper, which is less spicy than a jalapeño and blends well in both Italian and Mexican cuisine. It usually plays a secondary role, but in this Cheesy Poblano Rice Bake, it’s the star of the show.
We recommend charring the poblano peppers first. Although this step is optional, it enhances the dish’s flavor. You can char the peppers under the broiler, on a grill, or directly over a gas burner. Keep them under heat until the skin blisters and darkens. After cooling, peel off the skin to reveal a smoky, rich pepper flavor.
This versatile side pairs beautifully with various mains like grilled meats or fish, tacos, rotisserie chicken, or even your favorite soup. An added bonus is that the leftovers reheat well, making it an excellent option for meal prep. The recipe calls for an 8×8 pan but can be doubled and prepared in a 9×13 pan for larger gatherings.

Tips for Success:
- Avoid rinsing charred poblanos under water as this can wash away their rich, charred flavor. A little bit of charred skin or seeds won’t hurt.
- If the rice isn’t fully cooked after simmering for 10 minutes, don’t worry—it will finish cooking in the oven.
- For a hearty, all-in-one meal, consider mixing some shredded rotisserie chicken into the rice before baking.
