

Slow Cooker Cowboy Casserole

Ingredients
- 1 lb 450 g ground beef
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 15 oz / 425 g can corn, drained
- 1 15 oz / 425 g can kidney beans, drained and rinsed
- 1 10.5 oz / 300 g can condensed cream of mushroom soup
- 1/2 cup 120 ml milk
- 1 cup 120 g shredded cheddar cheese
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- Salt to taste
- 3 cups about 450 g frozen diced hash browns or cubed potatoes
- Optional topping: extra shredded cheese chopped parsley, or green onions
Instructions
- Brown the beef
- In a skillet over medium heat, cook the ground beef until fully browned. Add the chopped onion and cook for 2–3 minutes until softened. Stir in the garlic and cook for another 30 seconds. Drain excess grease.
- Layer the slow cooker
- Lightly grease your slow cooker. Spread half of the frozen potatoes on the bottom.
- Add the filling
- Spoon half of the beef mixture over the potatoes. Add half of the corn and beans.
- Mix the sauce
- In a bowl, whisk together the cream of mushroom soup, milk, paprika, salt, and pepper.
- Assemble layers
- Pour part of the sauce over the layers, then sprinkle some cheese. Repeat the layers (potatoes, beef, veggies, sauce, cheese).
- Cook low and slow
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are tender and everything is heated through.
- Finish and serve
- Sprinkle extra cheese on top during the last 15 minutes if desired. Let it sit for a few minutes before serving.
