

Crockpot Tomato Noodle Soup

Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion finely diced
- 3 cloves garlic minced
- 2 cans 14.5 oz each diced tomatoes, with juices
- 1 can 28 oz crushed tomatoes
- 4 cups vegetable broth or chicken broth
- 2 tablespoons tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 teaspoon salt adjust to taste
- ½ teaspoon black pepper
- 1 teaspoon sugar optional, to balance acidity
- 2 cups small pasta noodles such as elbow macaroni, ditalini, or egg noodles
- ½ cup heavy cream or coconut milk optional, for a creamy version
- ¼ cup chopped fresh basil or parsley for garnish
- Grated Parmesan cheese for serving optional
Instructions
- Add olive oil, diced onion, and minced garlic to a skillet and sauté for 2–3 minutes until fragrant and slightly softened. (This step can be skipped, but it adds more flavor.)
- Transfer the onion and garlic mixture to the crockpot.
- Add diced tomatoes, crushed tomatoes, broth, tomato paste, dried basil, oregano, thyme, salt, pepper, and sugar. Stir everything together.
- Cover and cook:
- Low: 6 hours
- High: 3–4 hours
- About 20–30 minutes before serving, stir in the noodles. Cover and continue cooking until the pasta is tender.
- Stir in heavy cream or coconut milk if using for a richer, creamy tomato soup texture.
- Taste and adjust seasoning. Serve warm topped with fresh herbs and Parmesan cheese if desired.
