- 2 –3 tablespoons olive oil divided
- 1 ½ tablespoons lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
Instructions
- Prepare the Potatoes:
- Peel and chop the potatoes into ½”–1” cubes. Set aside.
