Ingredients

Chicken

  • 4 boneless skinless chicken breasts (about 600–700g)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder

Sauce & Vegetables

  • 2 tbsp olive oil or butter
  • 1 cup mushrooms sliced (about 100g)
  • 3 cloves garlic minced
  • 2 cups fresh spinach about 60g
  • ½ cup heavy cream or cooking cream
  • ¼ cup chicken broth
  • ½ cup grated Parmesan cheese optional
  • ½ tsp Italian seasoning or dried thyme
  • Salt & pepper to taste
  • 1 tsp lemon juice optional, for brightness

Instructions

  • Season the Chicken
  • Pat chicken dry.
  • Season both sides with salt, pepper, paprika, and garlic powder.
  • Cook the Chicken
  • Heat olive oil in a large skillet over medium heat.
  • Cook chicken 5–6 minutes per side until golden and fully cooked.
  • Remove from pan and set aside.
  • Sauté Mushrooms & Garlic
  • In the same pan, add mushrooms and cook 4–5 minutes until browned.
  • Add garlic and sauté 30 seconds until fragrant.
  • Add Spinach & Make Sauce
  • Stir in spinach and cook until wilted.
  • Pour in chicken broth and cream, stirring to combine.
  • Add Parmesan cheese and Italian seasoning.
  • Simmer 3–5 minutes until slightly thickened.
  • Combine & Finish
  • Return chicken to the pan.
  • Spoon sauce over the chicken and simmer 2–3 minutes.
  • Add lemon juice if desired.
  • Taste and adjust seasoning.
